What about the Action button?
Overcrank adds Start Recording, Stop Recording and Tag HiLight actions to Shortcuts. You can put a Shortcut built from one of them on the Ultra's Action button, but it only works once Overcrank is already connected to the camera, and it opens the app as it runs. We tested it, and we don't lead with it: the record button in the app is quicker and more dependable.

Questions
Does Apple Watch Ultra work as a GoPro remote?
Yes, with an app. GoPro doesn't make one, but Overcrank needs only watchOS 10 or later, which every Apple Watch Ultra runs. Our settings photos were shot on an Ultra connected to a MISSION 1 Pro.
Can the Action button start a GoPro recording?
Only through a Shortcut you build yourself with Overcrank's Start Recording action, and Overcrank has to be connected to the camera first. Tapping record in the app is the dependable way.
Do I need my iPhone with me?
Not for the basics. Record, modes and battery and card status go straight from the watch to the camera over Bluetooth. The framing preview is relayed through the iPhone, so that one needs it nearby.
Which GoPro cameras work?
Overcrank is tested on the MISSION 1 Pro. It's built for HERO9 Black and later, but not yet tested on those. Which app lists which camera.
What does it cost?
Record, modes and status are free. Pro is a one-time US $9.99 and adds the camera's settings, presets synced to the watch and the framing preview.
